ripe plantains

tablespoons butter, melted

cups white cheese, grated

    Preheat oven to 400º F.

    Line a baking tray with non-stick parchment paper.

    Peel plantains, place them in the baking tray and brush them with melted butter.

    Bake for 25 minutes, flip them and bake them for an additional 10 minutes or until golden on both sides.

    Remove plantains from oven, make a cut lengthwise in the middle of each plantain and fill with cheese. Bake for 2-3 minutes or until cheese melts.

    Serve while hot.

Expert Tips

  • If the plantains start to brown too quickly but they’re still not cooked, you can cover them with aluminum foil so they don’t burn.
