The provoleta is a grilled or baked wheel of cheese that is traditionally served in Argentina. It's a perfect appetizer or snack.

Ingredients

  • 2 wheels provolone cheese with peel (8-9-oz each)
  • 4 tablespoons extra virgin olive oil, or as much as you need
  • Dry oregano, to taste
  • Sea salt or kosher salt, to taste
  • Freshly ground pepper, to taste

Directions

    Prepare the grill or oven. If you're using the oven, preheat to 325° F.
  • 2
    Place the slices on a tray and cover the cheese in the olive oil on both sides.
  • 3
    Sprinkle with dry oregano and place over the grill or in the oven. Roast until each side has browned and it's soft without falling apart (about 2-3 minutes).

    Season to taste and serve immediately. I like serving it with fresh bread and chimichurri.

    Let the cheese thaw a bit before grilling.

    If you don't want to use olive oil, sprinkle both sides with flour to prevent it from sticking to the grill or oven.
