Whatever the reason may be, sometimes we're just not in the mood to spend too much time in the kitchen; because of this we should always have a few simple and quick recipes to save you some time. Have you ever thought about how wonderful rice is? It's the perfect side dish! Other than being economical, it can also be easily combined with almost every dish and can be prepared in many different ways. It always remains fresh for a long time when its raw and kept covered up and best of all it cooks quickly. This is exactly what most of us need these days: quick and simple recipes with basic ingredients and relatively short cooking times. For this I have an excellent recipe that I know you and your family will love. Arancini are balls of rice filled with mozzarella and served with a side of marinara. Best of all you can prepare them with left over rice and this will cut your cooking time in half. MORE + LESS -

Ingredients

cups rice, pre-cooked prepared and refrigerated

tablespoons grated Parmesan cheese

ozs mozzarella, diced 3/4 inches or 1 1/2 inches
4
tablespoons bread crumbs
2
tablespoons grated Parmesan, to mix with the bread crumbs
1
egg, beaten
Salt and pepper

cup oil for frying

Ingredients for tomato sauce:

tablespoon olive oil

clove of garlic, crushed
1
can (14.5-oz) Muir Glen™ organic whole peeled tomatoes

teaspoon brown sugar
1
tablespoon ketchup
Parsley or basil, for garnish

    Remove the rice from the fridge then mix with 4 tablespoons of grated Parmesan and place back in the fridge until ready to use.

    Cut the mozzarella into 6 cubes and place in a container.

    Measure the 4 tablespoons of bread crumbs and mix with the 2 tablespoons of parmesan cheese and spread over a flat dish.

    Whip the egg in a small, deep container and add salt and pepper to taste. Set aside.

    Prepare the tomato sauce in a medium saucepan over medium-low heat. Add one tablespoon of olive oil and the crushed garlic, tomatoes, brown sugar, ketchup and cook for 15 minutes.

    In the meantime, remove the rice from the fridge and divide into 6 equal portions, make balls out of each. Make a hole in each ball and place a piece of mozzarella in it. Seal the cheese by closing the rice around it and make sure it keeps its round shape.

    Add 1/2 cup of frying oil (preferably coconut oil) to a medium saucepan over medium heat.

    Pass the balls through the whipped egg and then through the bread and parmesan mixture. When the oil is nice and hot, fry them on all sides until they've browned. Remove the balls and let the excess oil strain using a paper towel.

    Serve with the tomato sauce you prepared, decorate with curly parsley or basil.
  • Don't let leftover rice go to waste. If you don't have leftover rice, cook 1/2 cup of Arborio rice with 2 cups of water and cook for 25 minutes over low heat stirring constantly. Let cool for 3 hours.

Expert Tips

  • I recommend Arborio short-grain since it's creamy and absorbs flavor quickly.
  • I also recommend using silicone gloves to form the balls; they'll be easier to manage this way.
