Expert Tips

This variety of pumpkin is already sweet, but you can also sprinkle 1 tablespoon of brown sugar if you want.

You can also sprinkle some cinnamon over the pumpkin.

Directions

  • 1 Preheat the oven to 350°F. Spray a tray with cooking spray. You’ll need 4 small glasses or parfait glasses.
  • 2 Wash and cut the pumpkin into halves. Remove the seeds with a spoon and cut into slices.
  • 3 Place them on the tray, pour the agave nectar over the slices and bake for 20-25 minutes at 350 °F.
  • 4 Let it cool down. Using a knife, remove the peel and dice into small cubes.
  • 5 Pour 1/2 cup yogurt, add some pieces of pumpkin. Serve the pumpkin parfait with coconut and pumpkin seeds or granola.
