  • 1 In 12-inch skillet, melt butter over medium-high heat until hot. Cook fillets in butter 2 minutes on each side. Cover; cook 2 to 4 minutes longer or until fish flakes easily with fork. Remove from skillet; keep warm.
  • 2 Add onion and garlic to skillet; cook and stir about 1 minute or until tender. Add tequila to skillet; cook about 2 minutes or until tequila is reduced. Stir in lime juice, pepper flakes and cilantro. Add fish; cook over medium heat about 4 minutes to blend flavors.
  • 3 Place hot cooked linguine on large serving platter; top with fish mixture. Sprinkle with lime peel.
