Directions

  • 1 For the crust : Preheat oven to 350°F.
  • 2 Combine the cookie crumbs, butter and granulated sugar in a medium bowl. Pour in round, 9-inch springform pan. Bake for 6 to 8 minutes, don’t let turn too dark. Let the crumbs cool on a wire rack for 10 minutes.
  • 3 For the cheesecake: In a large bowl place cream cheese, granulated sugar and brown sugar, mix with electric mixer until the mixture is soft and spongy. Stir in the eggs, the pumpkin and the evaporated milk. Then add the cornstarch, the cinnamon and the nutmeg. Blend well and pour over crust.
  • 4 Bake for 55 to 60 minutes (or until when you insert a toothpick or skewer the edges are golden brown and center is firm).
  • 5 Let cheesecake cool completely.
