Expert Tips

Serve with aji made with cilantro, tomato, lime and vinegar or with your favorite sauce.

Directions

  • 1 Heat the oven to 350°F.
  • 2 Dice the potatoes into large cubes and add to a pot with water and salt. Boil until soft.
  • 3 Once the potatoes are cooked, remove them from the heat, drain and apply pressure until you have a puree.
  • 4 Shred the chicken breast. Set aside.
  • 5 Add the butter to a pan with the mushrooms and a bit of salt. Add the chopped garlic, stir the ingredients and let cook at low heat for at least 5 minutes.
  • 6 Mix the potatoes with the chicken and mushrooms.
  • 7 Open the Pillsbury™ Grands!™ biscuits! and separate the biscuits. Open each biscuit in the middle and fill with the chicken-potato mixture. Close each biscuit and seal by applying pressure to the borders with a fork.
  • 8 Cover the surface of each biscuit with a layer of egg yolk to give them a pretty color and shine.
  • 9 Place the empanadas in the oven for approximately 15 minutes or until they’ve turned golden brown and crunchy.
  • 10 Serve hot.
