Baked Zucchini Fries with Yogurt and Oregano Dip

1-2 tablespoons Sriracha (depending on how spicy you want them)
Juice of 1/2 lemon

You can also use tomato sauce instead of Sriracha, if you don’t like spicy dips.

Directions

  • 1 Preheat the oven to 350°F. Clean the zucchinis and trim off the ends.
  • 2 In a bowl beat the egg. In another bowl, mix the bread crumbs, parmesan cheese, basil, salt, and pepper.
  • 3 Using a fork, put the zucchini sticks in the mixture of egg and then dip them in the bread crumbs.
  • 4 Transfer to a baking tray coated with cooking spray.
  • 5 Bake for 15 minutes. Remove from the oven and then turn them over carefully. Bake at 350°F for 5 -10 more minutes or until they’re golden brown.
  • 6 In a bowl, mix the Greek yogurt, Sriracha sauce, lemon, oregano and salt to taste. Serve this dip with the zucchini fries.
