To give the muffins even more flavor, add a layer of shredded cheese between the bread and the egg.

Try using turkey bacon in place of the pork bacon.

Directions

  • 1 Preheat the oven to 400 °F. Spray a muffin pan with non-stick cooking spray.
  • 2 In a frying pan, cook the bacon for 3-5 minutes, or until slightly cooked but not crispy. Remove from pan and arrange strips on paper towel-lined plate.
  • 3 With a round cookie cutter or a cup, cut the slices of bread into rounds for use as the muffin bases. Cut the rounds to size of the muffin pan.
  • 4 Set the bread rounds in the bottom of the muffin tin and line the sides of each muffin with bacon, to form a kind of “bacon cup” with a bread base.
  • 5 Crack open an egg over the top of the bread round, being careful not to break the yolk.
  • 6 Once all muffins have been prepared, bake for 15 minutes or until the eggs are cooked to your liking and the bacon crispy.
  • 7 Season with salt and pepper to taste and serve immediately.
