Ingredients

  • 4 thick slices bacon
  • 4 eggs
  • 2 fresh thyme sprigs
  • 1 tablespoon grated parmesan cheese
  • Kosher salt and pepper, to taste
  • 2 tablespoons green onions, chopped

Directions

    Preheat oven to 375° F. In a frying pan, brown the bacon for 2-3 minutes. Remove bacon from frying pan and place on paper towels to remove excess oil.

    Spray a muffin tin with non-stick spray. Take a slice of bacon at a time and use it to line the bottom of 4 molds.

    Carefully break 1 egg into each mold lined with bacon. Sprinkle egg with thyme sprigs, parmesan cheese, kosher salt and pepper.

    Bake eggs for 10-15 minutes. You can adjust the cooking time depending on how you like the consistency of the egg yolks.

    Remove the baked eggs from molds and transfer to a plate. Sprinkle with green onions and serve immediately.
