When I’m planning a lunch or dinner for my vegetarian mom, I try and make things that could easily work both as a side dish or a main dish. Also, it’s the summertime so I want something that’s refreshing on a hot day but simple to make, without the need of the oven. I know it seems like a tall order, but really it isn’t. Let me introduce you to my vegetarian chopped salad! It meets all my criteria and happens to be delicious and filling.

Ingredients

  • 1 head iceberg lettuce, thinly sliced
  • 1/2 head purple cabbage, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup mozzarella cheese, grated
  • 1/2 cup yellow raisins
  • 1/2 cup pistachios
  • 1/2 cup green olives, chopped
  • Italian dressing, to taste
  • Marinated red peppers, to taste

Directions

  • 1
    Put all the ingredients in a bowl and mix to combine.

    Lightly dress with Italian dressing. Mix again to combine.

    Top with sliced red peppers.
  • 4
    Serve and enjoy!
