Beet Butter:

cup of butter, room temperature

cup of cooked beets
Salt and pepper

Cilantro Butter:

1/2
cup of butter, room temperature

cups of cilantro (no stems)

garlic clove, peeled
Salt and pepper

Red Pepper Butter:

1/2
cup of butter, room temperature
1/2
cup of red peppers, grilled
Salt and pepper

    Put all the ingredients for one type of butter in a food processor or blender. Blend until reaching your preferred texture. You can leave it with chunks of veggies or completely creamy.

    Pour the different butters into individual containers and serve.

    If you wrap each flavor in parchment paper, seal well and store in plastic bags in the freezer, you can use them for up to 3 months. To use just cut slices and let reach room temperature.

Expert Tips

  • You can use pesto instead of cilantro.
  • Here a quick and easy mini-recipe: combine 1/2 cup of butter with 2 or 3 tablespoons of your favorite salsa. Try it… it’s delicious!
