Ingredients

For the mango salsa:

mangoes, peeled and chopped
1/2
red onion, finely chopped

fresh jalapeño, seeds removed, finely chopped

tablespoon fresh cilantro, chopped
Salt, to taste

For the tacos:

Vegetable oil in spray, as needed
1/3
cup melted butter
1/2
teaspoon salt

garlic cloves, finely chopped

tablespoon fresh cilantro, finely chopped

tablespoon lemon juice
1
lb uncooked shrimp, peeled and deveined
4
breaded tilapia fillets, cut into long strips
12
corn tortillas
Lemon slices, as needed

    For the mango salsa: Combine mango and red onion, jalapeño and chopped cilantro; season with salt. Refrigerate until you’re ready to serve.

    For the tacos: Preheat oven to 350°F.

    Spray a baking tray with non-stick spray.

    In a large bowl, combine melted butter with salt, garlic, cilantro and lemon juice. Add shrimp and make sure to cover them with the mixture. Place shrimp and tilapia strips on the baking dish and bake for 15-18 minutes.

    Warm the tortillas on a comal or grill until they’re soft.

    Add 2-3 tilapia strips and 4-5 shrimps to each tortilla. Top with mango salsa and lemon juice.

    Serve and enjoy!

Expert Tips

  • For a spicier salsa, use habanero pepper instead of jalapeño.
