Rice is one of my favorite ingredients, so naturally it's never missing in my kitchen. It always get me out of a bind when I have to whip up a quick meal for guests or when I don't have very much time to cook. And best of all, it goes well with everything! A vegetarian friend of mine came to visit me some time ago, so I rummaged through my pantry and brought out a few ingredients to make a simple, but delicious dish: rice with tomatoes, olives and pine nuts. Ingredients

teaspoons of olive oil

garlic clove, finely chopped

cup of rice
Salt to taste
2
cups of water
1/2
cup of sun-dried tomatoes
1/2
cup of black olives
1
tablespoon of pine nuts
Zest from half a lemon
1/4
cup of lemon juice
1/2
cup of parsley

    Heat 1 teaspoon of oil in a large pot and fry the garlic. Stir for 1 minute. Add the water and reduce the heat. Let cook as usual.

    Heat the rest of the oil in a separate saucepan. Add the olives, tomatoes, pine nuts and lemon zest. Cook for 2 minutes. Sprinkle the lemon juice and let cook for 2 more minutes.

    Once the rice is cooked, combine it with the other mixture and the cilantro. Mix well and serve.

Expert Tips

  • You can use any type of rice like jasmine or whole grain.
