Rice with Tomatoes, Olives and Pine Nuts

Rice is one of my favorite ingredients, so naturally it's never missing in my kitchen. It always get me out of a bind when I have to whip up a quick meal for guests or when I don't have very much time to cook. And best of all, it goes well with everything! A vegetarian friend of mine came to visit me some time ago, so I rummaged through my pantry and brought out a few ingredients to make a simple, but delicious dish: rice with tomatoes, olives and pine nuts.

Ingredients

  • 2 teaspoons of olive oil
  • 1 garlic clove, finely chopped
  • 1 cup of rice
  • Salt to taste
  • 2 cups of water
  • 1/2 cup of sun-dried tomatoes
  • 1/2 cup of black olives
  • 1 tablespoon of pine nuts
  • Zest from half a lemon
  • 1/4 cup of lemon juice
  • 1/2 cup of parsley

Directions

    Heat 1 teaspoon of oil in a large pot and fry the garlic. Stir for 1 minute. Add the water and reduce the heat. Let cook as usual.

    Heat the rest of the oil in a separate saucepan. Add the olives, tomatoes, pine nuts and lemon zest. Cook for 2 minutes. Sprinkle the lemon juice and let cook for 2 more minutes.

    Once the rice is cooked, combine it with the other mixture and the cilantro. Mix well and serve.

    You can use any type of rice like jasmine or whole grain.
