Esponjado (fluffy mousse) is a traditional and popular Colombian dessert with many variations using lulo (naranjilla), orange, lime, passion fruit, coffee and more. Esponjados are usually made with egg whites, whipped cream, condensed milk and your choice of puréed fruit. It is one of those perfect desserts: simple, easy to make and absolutely delicious! Esponjado has a mousse texture that’s light, fluffy, creamy and fruity. A slightly different mousse to end a meal wonderfully. This is a great dessert for entertaining because of its beautiful presentation; you can also make individual servings and prepare it a day in advance. This mini portion of Raspberry Esponjado is just enough to be satisfied, but I have no doubt it will leave you wanting more. I added a layer of crushed graham crackers at the bottom of the serving glass for texture. ¡Buen provecho!

Ingredients

  • 1/3 cup water
  • 1 tablespoon unflavored gelatin
  • 2 cups fresh raspberries
  • 1 can (14 oz) condensed milk
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 3 egg whites, from pasteurized eggs
  • 1 cup of crushed graham crackers for serving

Directions

    Add water and gelatin in a small pot over medium heat, cook for about 2 minutes or until gelatin dissolves. Set aside.

    Place raspberries and condensed milk in a blender; blend for about 2 minutes. Add dissolved gelatin in blender; blend for another minute. Transfer to large bowl; set aside.

    In medium bowl, using an electric mixer beat heavy cream for about 3 minutes, or until thick and foamy. Pour heavy cream mixture into bowl containing the raspberry mixture, until no white streaks remain. Set aside.

    In different clean bowl, using an electric mixer beat the egg whites and sugar until stiff.

    Stir in egg whites to raspberry mixture, gently folding to incorporate. Don’t overwork mixture.

    Spoon a layer of graham crackers crumbs on the bottom of the individual serving glasses or bowls; add raspberry mixture on top. Refrigerate for about 5 hours or overnight.
