Who doesn't love warm soup to fight off the cold?They're easy to prepare and filled with flavor. It's the perfect way to warm your bones if you've been outdoors making snowmen or playing with the kids. To prepare this simple potato soup you only need 5 ingredients and you probably already have them in your kitchen. I hope you like this recipe.

Ingredients

  • 3 lb of potatoes
  • 1 liter of milk (2%)
  • 1 cup shredded cheddar cheese
  • 12 green onions or scallions

Directions

    Peel, wash and cut the potatoes into slices. Boil them in water until the potatoes are soft.

    Once the water starts boiling, remove most of the water (not all), be sure that there’s still a little bit left. Add the liter of milk.

    Boil the potatoes in the milk and stir until the potatoes begin to come apart.

    Season with salt to taste. I used 1 tablespoon of salt, 2 teaspoons of pepper and 2 teaspoons of garlic powder.

    Serve the soup with a bit of shredded cheese and chopped green onions.

Expert Tips

  • tip 1
    I like there to be chunks of potato in the soup, but if you prefer a creamy soup then just use a potato masher or a form to break them down a little more.
