Parrilla Chicken Tacos

A few years ago, I was shopping at a swap meet with my mom. After a few hours of buying cheap junk, we went to eat in the food court. It was a huge mess and it got really crowded. Suddenly, I heard a vendor yell, "Chicken Parrilla here!" I was eager to try it because it was a new taco variety for me, and it was delicious! Ingredients

  • 1 whole chicken, cut into pieces but still on the bone
  • 1 orange, juiced
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1/2 tablespoon seasoning salt
  • 1/4 teaspoon cumin
  • 16 corn tortillas

Garnishes, to taste:

  • Salsa
  • Grilled onions
  • Black beans

Directions

    Place chicken in a large airtight bag and add in orange juice, olive oil, minced garlic, seasoning salt, and cumin. Place in the fridge and allow to marinate for a minimum of 1 hour.

    Remove chicken from the marinade and place on a hot grill. Cook until the outside is crisp and the meat is white inside.

    Remove from grill, chop meat, and remove bones. Cut into cubes.

    Warm tortillas, and fill the center of each tortilla with a 1/4 cup of chicken cubes.

    Top with salsa, grilled onions, and black beans. Serve and enjoy!

    You can also marinate the meat with a Mexican hot sauce.
