I want to teach you how to prepare a fabulous, multi-functional sauce that you can’t miss having in your fridge! It’s a basic spicy sauce, very easy to prepare. I first learned how to make Brazilian molho apimentado sauce from a friend who is a divine cook! It’s ideal for seasoning, marinating, using as a dip and simply enjoying. The amount of spice depends on your personal touch. This sauce is common in Brazil, and I like to use it for pastas, tacos, seafood, meat? basically, it is so delicious you can eat it with pretty much anything you like!

Ingredients

  • 1 large red onion
  • 1 medium-size green bell pepper
  • 1 medium-size red bell pepper
  • 2 ripe tomatoes
  • 3 red chili peppers
  • 3 garlic cloves
  • 2 tablespoons mustard
  • 2 tablespoons apple vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • 1 bay leaf
  • 1 tablespoon fresh parsley, diced
  • 1 tablespoon fresh cilantro, diced
  • 1 tablespoon fresh oregano, diced

Directions

    In a blender or food processor, blend half of the onion, half of the green and red bell peppers, one tomato, the red chili peppers and the garlic cloves.

    Next, add the mustard, vinegar, sugar, salt and the black, white and cayenne peppers to the mixture and process until all ingredients are well blended.

    Finely dice the other half of the onion, green and red bell peppers.

    In a small saucepan, add a tablespoon of olive oil over medium heat. Add the onion and bell peppers, and sauté them for approximately three minutes. Then, mix in the remaining tomato and the bay leaf, stirring constantly for five more minutes.

    Afterwards, incorporate the sauce from your food processor to the pan and stir for two minutes or until all the ingredients are thoroughly mixed. Check that the amount of salt and peppers are to your taste.

    Finely chop the parsley, cilantro, oregano and sprinkle over the sauce. Serve immediately.

    If you are not going to use the sauce immediately, store it in a container with a vacuum-sealed lid in the refrigerator for no longer than one month.

    Use a tomato variety appropriate for sauce (such as Roma). Make sure they are red and ripe.
