Mexican Rice with Shrimp Kebabs

When dinnertime comes around and there isn't much time to prepare complicated dishes for your family, this rice with shrimp kebabs is a great solution. This recipe only has five ingredients and is a perfect way to stay within your budget. The result is delicious and your family is sure to love it.

Ingredients

  • 2 packages Old El Paso™ heat & serve Mexican rice
  • 24 uncooked medium shrimp, peeled and deveined
  • Salt and pepper to taste
  • 1 tablespoon chipotle chili pepper powder
  • 1 can (11 oz) corn with red and green peppers, drained

Directions

    Rinse the shrimp and dry over paper towels, season with salt, pepper and chipotle. Skewer 3 to 4 shrimp. Place in a plastic bag and let marinate for at least 30 minutes.

    After this time, cook for 2 minutes on each side on the grill or on a stove griddle.

    For the rice, just follow the instructions on the package and serve with 1 or 2 kebabs.

  • You can use regular corn instead of the Mexican corn.
  • If you want, you can serve the rice and shrimp in Old El Paso™ Taco Boats™ Soft Flour Tortillas.
