Shrimp and chicken chupe is a traditional soup in South America and Panama. Ingredients differ from country to country, but in most cases, the main ingredients are potato and corn. This is one of those dishes that can make you feel great because of its delicious smell and comforting flavor. You can make it with fish, shrimp or chicken, accompanied by vegetables, cilantro, potatoes, egg, salt, onion and milk to taste. This heartwarming and filling dish is best served hot and is perfect at home after a long day out.

Ingredients

  • 6 chicken breasts, skinless
  • 1 cup shrimp, peeled
  • 2 leeks
  • 1 cup cilantro
  • 2 onions, chopped
  • 6 bell peppers, sweet
  • 6 garlic cloves
  • 6 cups water
  • 6 large potatoes, cubed
  • 1 can evaporated milk
  • Corn on the cob
  • 1 can corn
  • Salt and pepper to taste

Directions

    Pour the six cups of water into a big pot. Boil the chicken with the corn on the cob, chopped onion, leek leaves, cilantro, bell pepper, ground garlic and salt.

    Let the broth boil for about an hour. Remove the chicken and the corn. Once it’s cold, strain the broth.

    Dice the chicken and potatoes and cook them in the chicken broth. Slice the leek (the white part) and add it to the broth. When everything is cooked, add the chicken, the can of corn and the shrimp. Season with salt and pepper to taste. Add the evaporated milk and garnish with cilantro. Serve hot.
