Ground Beef Mofongo Taco Bowls

Got leftover ground beef? How about using it for mofongo tacos bowls? They are perfect for a taco afternoon with family and friends. Recycle all your leftovers to create delicious bowls!

Ingredients

  • 1 lb ground beef
  • 2 tablespoons Old El Paso™ original taco seasoning mix
  • Salt and pepper, to taste
  • 2 green plantains
  • Oil for frying, as needed
  • 2 tablespoons bacon pieces (optional)
  • 1 garlic clove, finely chopped
  • 1/4 cup red onion, sliced
  • 4 taco bowls
  • 2 cups iceberg lettuce, finely chopped
  • 12 cherry tomatoes, sliced
  • 2 tablespoons cilantro, finely chopped

Directions

    Cook ground meat, season with taco seasoning, salt and pepper (or use leftover meat).

    Peel plantains, cut in 1 1/2 in thick slices and fry for about 12 minutes on medium-high heat or until golden. Turn half-way through to fry evenly. Remove from pan and mash them with the bacon, garlic, and onion. Form 4 half circles and set aside.

    Cover the bottom of each bowl with lettuce, tomato and ground meat. Top with mofongo, tomato and cilantro. Serve with tortilla chips.

  • Add corn and black beans for an extra touch of flavor. You can also include avocado or mango.
