When I want my daughter to eat vegetables without making a fuss, I simply prepare a meat or chicken hot dish, camouflaging the veggies in the filling. She’s so occupied with the melted cheese that she pays less attention to the good stuff it's covering. I use different ingredients each time I pull out this recipe. I have substituted the celery for carrots, and on other occasions I have swapped the beef out for chicken. The sabor is just as rico, and the meal equally wholesome. No one will believe the dish is ready in less than 30 minutes once they've seen the elaborate presentation. This hearty casserole is a great way to spoil your family!

Ingredients

  • 1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Flaky Layers Buttermilk Biscuits (8 Count)
  • 1 large tomato, chopped (about 1/2 cup)
  • 1 garlic clove, finely chopped
  • 1/2 cup celery, finely sliced
  • 1 lb. ground beef
  • 1/2 cup tomato sauce or paste
  • 1/2 cup sliced green olives
  • 1 tablespoon capers (optional)
  • Salt and pepper, to taste
  • Mozzarella cheese, shredded (1 cup or to taste)

Directions

    Heat the oven to 350°F.

    Split the biscuits in half, arranging the bottom halves on a baking sheet. Set aside the other halves. Bake for 8 to 10 minutes and set aside. While in the oven, combine the tomato and chopped garlic in a hot frying pan at medium heat. Add the celery and ground beef and stir to combine all ingredients.

    When the meat is golden, add the tomato sauce or paste, sliced olives, capers and salt and pepper to taste.

    Line the bottom of an oven-safe casserole or baking dish with the pre-baked biscuit halves, cover with the ground beef mix, shredded mozzarella cheese, and the top half of the biscuits (that have not yet been baked).

    Bake for approximately 15 to 20 minutes, or until the biscuits are golden brown and the dough is cooked.

    Serve hot.
