I can’t wait until it’s time to stop eating seasonal winter fruit, like apples and pears, and start savoring delicious mangos, kiwis, strawberries, raspberries and peaches. Spring offers such spectacular fruit. I love playing with their gorgeous colors, and making desserts for my family that are delicious, as well as beautiful. These fruit toasts are super easy to make, and can be adapted to any kind of fruit you like or might find at the market.

Ingredients

  • 4 flour tortillas
  • 2 tablespoons of sugar
  • 1/2 teaspoon of powdered cinnamon
  • 4 oz. of cream cheese (or mascarpone cheese) at room temperature
  • 1 ripe mango, sliced
  • 4 kiwis, peeled and sliced
  • 8 strawberries or other small fruit
  • 4 blackberries

Directions

  • 1
    Pre-heat the oven to 350F.
  • 2
    In a small bowl, mix the sugar and cinnamon, and then sprinkle it over the tortillas.

    Place the tortillas on a baking sheet, and bake them for 6 – 8 minutes until they are crunchy. Let them cool.

    Once they are cool, cover them with a layer of the soft cheese and decorate them with fruit.

    Serve immediately.

  • tip 1
    Try bringing the fruit, cheese, and already baked tortillas to the table, and letting people make their own. It’s a lot of fun!

    Grapes, oranges, tangerines and pineapple make great alternatives for your toast.
  • tip 3
    You can also substitute hazelnut spread with cocoa, jelly or marmalade for the cheese.
  • tip 4
    If you crave warm weather fruit in the winter, canned fruit is a good alternative.
