French Fries with Eggs and Tomatoes

This is one of those recipes that can get you out of a tight spot. Items that you have in the pantry and fridge are transformed into a delicious dinner in less than 30 minutes. We're a big fan of Cascadian Farms™ French fries in my house because they're delicious and easy to prepare. Give this recipe a try!

Ingredients

  • 1 bag (16 oz.) Cascadian Farms™ Straight Cut French fries
  • 1 can (14.5 oz.) Muir Glen™ organic fire roasted diced tomatoes with green chilies
  • 1 onion
  • 2 garlic cloves
  • 1/2 teaspoon of cumin powder
  • 4 eggs
  • Mexican queso fresco
  • Cilantro, to taste
  • Oil, salt and pepper, to taste

Directions

  • 1
    Bake the French fries according to the instructions on the package.

    Dice the onion into small cubes.
  • 3
    Heat 1 tablespoon of oil in a 12-inch nonstick saucepan over medium-high heat. Add the onion and cook for 5 minutes stirring occasionally.

    Add the thinly chopped garlic and the cumin, stir and cook for 1 minute.

    Add the can of tomatoes and stir, lightly season with salt.

    Cook at low heat until the fries have 8 minutes left to cook. Create 4 “nests” in the pan and place one egg in each.

    Cover the pan and cook the eggs for 5-8 minutes.

    Sprinkle with queso fresco and cilantro right before serving.

    Serve with the warm French fries.

Expert Tips

  • You can use diced tomatoes without the peppers if your family doesn't enjoy spicy food.
