Every Friday was ‘enfrijolada day’ at home. My mom used to spoil us with this inexpensive but delicious recipe that was everyone’s favorite. Everyone knew of this tasty dish, so we always had unexpected visitors arriving just in time for dinner. Beans are a must-have in every Mexican home, and they are the main ingredient in this recipe from my childhood, when I used to help my mom prepare it at home. Let’s get cooking!

Ingredients

  • 3 cups cooked black beans
  • 1 cup water
  • 1 teaspoon cumin
  • Salt to taste
  • 1 cup canola or corn oil
  • 12 fried corn tortillas
  • 2 cups grated manchego or Monterey Jack cheese
  • 1 cup white onions, chopped
  • Mexican cream (to taste)
  • 1 cup grated aged cheese (Añejo)
  • 1 sliced avocado
  • Cilantro sprigs for garnish, if desired

Directions

    To make the bean sauce, put the cooked beans and water in the blender. Pour this sauce into a pot and heat over medium heat; season with cumin and salt. Let it heat up and cover. This sauce should be hot when you serve the dish and its consistency should not be too thick. If it needs a little more water, add some as necessary.

    Add canola oil to a skillet and fry the tortillas.

    One by one, immerse the tortillas in the bean sauce, place them on a plate and stuff them with grated manchego cheese and onions. Fold and repeat the process with the rest of the tortillas.

    Drench them in the bean sauce, add the Mexican cream to taste and some onions; sprinkle with grated aged cheese, and garnish with avocado slices and cilantro sprigs.

    Serve hot.

    You may use canned beans, if you wish. Serve with green sauce.

    You can substitute shredded chicken for manchego cheese.
