Easy Mexican Chicken and Beans

Ingredients

  • 1 lb uncooked chicken breast strips for stir-fry
  • 2 tablespoons 25% less-sodium taco seasoning mix
  • 1 can (15 oz) black beans or pinto beans, rinsed, drained
  • 1 1/2 cups frozen corn
  • 1/2 cup water
  • 8" tortillas, if desired

Directions

    Spray 10-inch skillet with cooking spray. Cook chicken in skillet over medium-high heat 8 to 10 minutes, stirring occasionally, until no longer pink in center.

    Stir in seasoning mix, beans, corn and water. Reduce heat to medium-low. Cook 4 to 5 minutes, stirring frequently, until sauce is slightly thickened. Serve with tortillas.
