Ingredients

  • 2 egg whites
  • 4 tablespoons powdered sugar
  • 1 3/4 cups Corn Chex™ cereal
  • 1 3/4 cups sugar-free coconut flakes
  • 1/3 cup dried cranberries
  • 1/2 cup semi-sweet chocolate chips, melted

Directions

    Preheat the oven to 300° F. Line a cookie sheet with parchment paper.

    In a small bowl, mix together the egg whites and sugar until well combined.

    In a medium bowl, combine the cereal, coconut and cranberries. Add egg whites mixture and mix together well.

    Take 1/4 cup of the mixture in your hand. Gently press together so the ingredients combine, without breaking the Chex™ apart, and place on the cookie sheet. Repeat the same process until you’re finished with the whole mixture.

    Bake for about 20 minutes, or until the coconut begins to brown. Remove from the oven, let it cool and drizzle with the melted chocolate.

    You can also distribute the mixture into a mini-muffin pan instead of making them with your hands.
