Cola Pork Tostadas

Pork that has been cooked in cola over low heat is delicious as it is, but when you serve it over crispy tortillas, with avocado slices, cilantro, red onions and chopped tomatoes, it becomes an amazing combination of flavors and textures. Dishes made with cola are very popular in Colombia and other Latin American countries. Some of the dishes I most enjoy making are rice with cola, cola chicken and cola barbecue pork ribs. Ingredients

  • 1 pork shoulder (about 3 lb)
  • 3 cans cola
  • 8 garlic cloves, finely minced
  • 2 white onions, chopped
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • Salt to taste

To serve with:

  • 10 tortillas
  • 1 avocado, sliced
  • 1 tomato chopped
  • 1 red onion, cut into thin strips
  • 1/2 cup fresh cilantro, chopped

Directions

    Put the piece of pork in a slow cooker with the cola, garlic cloves, onions, pepper, oregano, cumin, chili and salt.

    Cover and cook over high heat for about 5 hours.

    Remove the meat from the pot and use two forks to shred it. Set aside.

    Arrange two tortillas on each plate. Place pork over each, and then add the avocado slices, tomato, red onion and cilantro. Serve.

Expert Tips

  • tip 1
    I prepared my cola pork in a slow cooker, but if you don’t own one, just set the oven to low and put it in for about 3 hours.
  • tip 2
    You may use ready-made tortillas, which you can get at the store, or you can make them at home with corn flour. I like to use fresh tortillas and fry them in very hot oil. They’re tastier and very easy to make.
