Dad loves to grill, but this Father’s Day we’re taking over the grill. Do the same and surprise him with a special Father’s Day dinner: fajitas! Pamper him this year with these juicy fajitas marinated in his favorite soft drink. The soda helps to tenderize the fajitas, while the chipotle adds a subtle spicy layer. Throw a few veggies on the grill while your fajitas cook for an easy side dish. And don’t forget to heat up a few tortillas and slice up a few avocados. Serve these fajitas up family style along with a few cold sodas. Dad will love them!

Ingredients

  • 1 (lb) pound skirt steak
  • 1 (16 oz) cola flavored Mexican soda
  • 2 chipotle peppers, from can, chopped
  • 1/4 cup brown sugar
  • 2 tablespoons salt
  • 1 tablespoon pepper
  • 3 tablespoons vegetable oil

Directions

    In a large casserole dish, combine the skirt steak, soda and chipotles.

    Marinate for 4 to 12 hours in the refrigerator.

    Pre-heat your grill.

    Combine the brown sugar, salt and pepper and spread on baking sheet or large plate.

    Remove the marinated skirt steak from the soda and coat in the rub.

    Grill the meat for 3 to 4 minutes on each side, or until desired temperature is reached.

    Remove the skirt steak from the grill, and let rest for at least 5 minutes before slicing.
