I am a cookie monster. I am the cookie queen. I live to eat cookies. If there is a dessert table filled with every possible pastry known to man, I will pick out my favorites, but you can rest assured I will grab for a chocolate chip cookie in that assortment of delectable sweet edible gems. There is something about the melted chocolate coated in a sweet cookie crumble met with a bite of a nut that makes me fiend. These chocolaty coco-nutty macadamia cookies are luxurious. Rich and dense with a wall of flavor that will knock you over. Enjoy them with coffee or milk or eat them all on their own. These cookies will be the hit of your recipe book.

Ingredients

  • 2 1/3 cups multipurpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup butter (room temperature), 2 sticks
  • 3/4 sugar
  • 3/4 packed dark brown sugar
  • 1/2 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups chocolate chips
  • 1 cup coarsely chopped macadamia nuts
  • 1 cup shredded sweetened coconut

Directions

    Preheat oven to 375°F.

    In medium bowl, stir in flour, salt, and baking soda. Set bowl aside.

    In an electric mixer, stir in butter, sugar, and dark brown sugar. Mix until creamy. Then stir in almond and vanilla extracts. Mix to combine. Next, stir in eggs, and mix until fully incorporated.

    Stir in dry ingredients to butter mixture, until everything is combined. Then add in chocolate chips, macadamia nuts, and coconut. Mix this well.

    On a cookie sheet lined with parchment paper, drop cookie dough by heaping tablespoons 2 inches apart. Bake for 11 to 12 minutes or until golden brown. Take out of oven and let cool for a couple of minutes before transferring to a wire rack.
