Cilantro and Lemon Brown Rice

Ingredients

  • 1/2 white onion, chopped into large pieces
  • 1 garlic clove
  • 2-1/2 cups chicken stock
  • 2 tablespoons vegetable oil
  • 1 cup long-grain brown rice
  • 1 teaspoon salt
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup fresh cilantro, finely chopped

Directions

    In a blender, process the onion and garlic with the chicken stock.

    Heat the oil in a medium-sized pot on high heat. Sauté the rice with the oil, stirring continuously until the rice is lightly golden.

    Carefully transfer the contents in the blender to the pot with the rice. Season with salt.

    As soon as it starts to boil, reduce to low heat, cover with lid and let cook on low for 20-30 minutes, or until all the liquid has evaporated. Remove from heat. Add lemon juice and zest and mix in. Cover and let rest for 5 minutes.

    Add fresh cilantro just before serving. Serve and enjoy!

    For more color and flavor, mix in 1/4 cup of wild rice with the long-grain rice.
