Chorizo Omelette

There’s nothing better than waking up with a delicious chorizo omelette for breakfast, especially if we are celebrating Father’s Day. My husband loves chorizo, so an omelet is an excellent way to start such a special day. I'm sure all the members of the family will enjoy this special breakfast with daddy because it is delightful, easy and quick to prepare. And if you have teenagers at home, they can help you prepare it! Let's cook! MORE + LESS -

Ingredients

farm eggs

cups of Spanish chorizo, sliced
1/3
cup of sour cream or Greek yogurt
Salt and pepper to taste
Fresh oregano for garnish

    Using a skillet, fry the chorizo on its fat at medium heat and brown it. Drain the extra fat to avoid a fatty breakfast.

    Whip the eggs in a bowl for a few minutes with a fork or beater and add the cream or yogurt, salt and pepper. Whip for a while until the ingredients are well mixed.

    Add the whipped eggs to the skillet along with the chorizo and let the eggs cook until you have an omelet.

    Garnish with fresh oregano and serve with black beans.
  • If you wish, you can use canned beans. Eggs cook really fast, so I recommend cooking them at medium heat to avoid overcooking them. You will know when the eggs are overcooked because they turn green on the edges and achieve a plastic-like consistency. Use a medium-sized skillet to easily flip the omelet.
