Ingredients

For cupcakes:

box white cake mix

cups champagne
1/3
cup vegetable oil

egg whites

For frosting:

ozs cream cheese, at room temperature
1/2
cup butter, at room temperature
2-3 cups powdered sugar
1/4
cup champagne

For garnish:

Sprinkles

    For cupcakes: Pre-heat oven to 350 ºF and spray cupcake tin with non-stick cooking spray. In a large bowl, whisk together cake mix, champagne, vegetable oil and egg whites. Fill cupcake tin and bake for 18- 20 minutes or until toothpick inserted comes out clean. Cool while you make frosting.

    For frosting: With an electric mixer, mix cream cheese and butter until smooth, about 5 minutes. Add champagne and continue to mix, be sure to scrape down sides of bowl. Slowly add the powdered sugar by 1/2 cup until you get desired thickness.

    Frost cupcakes and add sprinkles.

  • Add a few drops of food coloring to batter to create colorful cupcakes.
  • Substitute champagne with prosecco, sparkling cider or soda.
