What better way to celebrate the beginning of a new year than with this festive champagne cake? It's the perfect dessert to share with family and friends as New Year's resolutions are made and we anxiously wait for the clock to strike midnight. This fun dessert can also be served as a dessert after a romantic dinner or can be prepared in mini cupcake molds as a sweet appetizer for any dinner party.

Ingredients

  • Non-stick baking spray
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • 3 eggs
  • 1 3.5-oz package vanilla pudding mix
  • 1 cup olive oil
  • 1 cup champagne
  • 3-4 drops red food coloring (optional)

For filling:

  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • 1 pinch salt
  • 1 cup milk
  • 2 egg yolks
  • 3 tablespoons champagne
  • 1/4 teaspoon lemon juice

For frosting:

  • 2/3 cup whipped cream
  • 1/4 cup sifted powdered sugar
  • 1 teaspoon vanilla

Directions

    Preheat oven to 350°F. Spray two 9-inch cake pans with non-stick cooking spray. Set aside.

    In a large mixing bowl, combine cake mix, eggs, vanilla pudding mix, oil, champagne and food coloring (optional). Beat for 4 minutes with an electric hand mixer.

    Pour cake batter in cake pans and bake for 25-30 minutes until a toothpick inserted comes out clean.

    Let cool for 10 minutes then transfer to a rack to cool completely. Spread champagne filling between layers and frost with whipped frosting.

    For filling: In a medium mixing bowl, combine sugar, cornstarch and salt.

    In a small separate bowl beat together milk and egg yolks.

    Add milk and egg mixture gradually to dry ingredients, whisking as you add wet ingredients.

    Transfer mixture to a medium saucepan and cook over low heat until it boils and thickens; approximately one minute.

    Remove from heat, transfer to a bowl, cover with plastic wrap and set aside to cool.

    Once filling has cooled, stir in champagne and lemon juice and spread between cake layers.

    For frosting: In a medium mixing bowl, beat whipping cream until peaks form. Beat in sugar and vanilla. Frost cake evenly.
