Blue Raspberry Whoopie Pies

Earth Day is around the corner, and these blue and green whoopie pies are perfect for the occasion. I'm sure these pretty and tasty little treats will be a big hit!

Ingredients

  • 1 package Pillsbury™ Moist Supreme™ Blue Raspberry Flavored Premium Cake Mix
  • 1/2 cup melted butter
  • 1 egg
  • 1 (12-oz) tub Pillsbury™ Fluffy Frost™ Vanilla Marshmallow Flavored Frosting
  • 4-6 drops edible, green food coloring

Directions

    Preheat the oven to 350°F.

    In a medium-sized bowl, combine the cake mix, butter and egg with a wooden spoon. Cover and refrigerate for 15 minutes.

    Line 2 baking sheets with non-stick baking paper.

    Make 1-inch balls out of the cake mix. Arrange the dough balls on the cookie sheets, leaving some space between each one since they will expand while in the oven.

    Bake for 8-10 minutes, or until the bottom of each "pie" is lightly golden brown. Remove from the oven and transfer to a cooling rack. Let cool completely.

    In a small bowl, mix the frosting with the food coloring.

    Spread the frosting on the flat side (the bottom) of a "pie" or cookie, and cover with another cookie to form a whoopie. Repeat with all the cookies. Serve.

  • You can use this same recipe, swapping out the blue cake mix with a white cake mix, to make it any color you like. Simply add drops of food coloring to the white cake mix.
