Expert Tips

You may use spinach in place of the arugula or substitute white pasta for whole-grain or gluten-free noodles.

Garnish with Parmesan cheese and serve with garlic bread.

Directions

  • 1 Add the 4 cups of salted water to a wide pot and bring to a boil over medium heat. Add the pasta. Cook for approximately 10 minutes, until noodles are al dente.
  • 2 Add the oil to a frying pan and parboil the garlic, adding the arugula and cooking the mix for 5 minutes.
  • 3 When the pasta is ready, drain and add to the frying pan with the garlic and greens. Combine all ingredients using tongs and season with salt and pepper, to taste.
  • 4 Serve immediately.
