When the warmer months arrive, I look forward to fairs and carnival food. I can almost smell the popcorn, cotton candy and all the delicious treats you can think of. The food gets more and more tempting every year I go back, from fried cookies to fried ice cream to fried butter! One of my favorites is the pancake fried bacon. How can one resist this all-in-one breakfast treat? Since the warm weather is still a few weeks away, I decided to play in my kitchen and come up with my own version of pancake fried bacon for a preview of what’s to come this summer.

Directions

  • 1 Cook bacon on a skillet until crisp and drain on a plate lined with paper towels.
  • 2 In a separate skillet, heat oil over medium heat.
  • 3 Add water to Bisquick Shake ‘N Pour Pancake Mix container. Shake until well mixed. Pour into a mixing bowl.
  • 4 Dip fried bacon into pancake mix. Fry in oil until bottom is golden brown and then flip with spatula to cook other side.
  • 5 Place on a plate lined with paper towels to cool.
