Expert Tips

Loaded with raisins and nuts, these delicious oatmeal cookies will not last long.

Stop the raisin rut! Why not use another dried fruit? Try dried blueberries, cherries, cranberries, chopped dates, apricots or figs, or even dried mixed fruit.

Directions

  • 1 Heat oven to 375° F. Grease cookie sheets with shortening or cooking spray. In large bowl, beat granulated sugar, brown sugar and butter with electric mixer on medium speed until light and fluffy, scraping bowl occasionally. Beat in vanilla and egg until well blended. On low speed, beat in flour, baking soda, cinnamon and salt until well combined, scraping bowl occasionally. Stir in oats, raisins and nuts.
  • 2 Drop dough by rounded teaspoonfuls 2 inches apart onto cookie sheets.
  • 3 Bake 7 to 10 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets.
