Expert Tips

You can season the marinade with other spices like fresh oregano or rosemary.

The combination of citrus and aromatic spices is the key to this delicious recipe. In preparing a marinade with lemons, thyme, garlic and a few other ingredients, the result is a juicy baked chicken that will literally have you licking your fingertips. It's important to let the pieces of chicken marinate plenty of time so they can absorb these delicious flavors in each and every bite. Serve this chicken with your favorite side of vegetables and baked potatoes to give your family a complete meal. Enjoy!

Directions

  • 1 Season the chicken with olive oil.
  • 2 Cut one of the lemons into slices without removing the peel.
  • 3 Place lemon slices with the chicken seasoning in the oil, cover the container and keep refrigerated.
  • 4 Crush the garlic, squeeze the juice from the rest of the lemons and prepare a dressing with the honey and soy sauce.
  • 5 Pour the mixture over the chicken making sure the pieces are covered in it.
  • 6 Add the fresh thyme and season with salt and pepper to taste.
  • 7 Cover the chicken again and refrigerate for at least 4 hours, though it's best to let it marinate over night.
  • 8 Preheat the oven to 400°F.
  • 9 Bake the chicken for 45 minutes to an hour, flip the pieces from time to time so they don't burn.
  • 10 You'll know it's ready when you poke the chicken and the juices come out clear.
  • 11 Place on a serving platter with vegetables or potatoes, and garnish with thyme.
