can (14.5 oz.) Muir Glen™ organic fire roasted diced tomatoes with green chilies

onion

garlic cloves

Mexican queso fresco
Cilantro, to taste
Oil, salt and pepper, to taste

Directions

  • 1 Bake the French fries according to the instructions on the package.
  • 2 Dice the onion into small cubes.
  • 3 Heat 1 tablespoon of oil in a 12-inch nonstick saucepan over medium-high heat. Add the onion and cook for 5 minutes stirring occasionally.
  • 4 Add the thinly chopped garlic and the cumin, stir and cook for 1 minute.
  • 5 Add the can of tomatoes and stir, lightly season with salt.
  • 6 Cook at low heat until the fries have 8 minutes left to cook. Create 4 “nests” in the pan and place one egg in each.
  • 7 Cover the pan and cook the eggs for 5-8 minutes.
  • 8 Sprinkle with queso fresco and cilantro right before serving.
  • 9 Serve with the warm French fries.
