Ingredients

To prepare the soup:

tablespoons olive oil
1/2
medium-sized onion, finely chopped

serrano chili pepper, finely chopped
1
garlic clove, chopped
1
lb ground beef
Salt and pepper, to taste
2
cups pinto beans, drained
2
cups enchilada sauce
1
(8 oz) can tomato paste
4
cups chicken or beef broth

To prepare the garnish:

Sour cream, to taste
Cheddar cheese, shredded, to taste
Chopped tomato, to taste
Chopped onion, to taste
Fresh cilantro, finely chopped
Tortilla chips, to taste

Directions

  • 1 Heat the vegetable oil in a pan over high heat.
  • 2 Sauté the onion and chili pepper for 2-3 minutes until the onion is translucent. Add the garlic and ground beef and let cook for 8-10 minutes, until the meat is completely cooked. Season with salt and pepper, to taste.
  • 3 Add the pinto beans, red enchilada sauce, tomato paste, and chicken or beef broth. Cover and let cook over high heat for about 5 minutes until boiling. Reduce to low heat and cook for an additional 10 minutes. Remove from heat.
  • 4 Serve the soup in bowls and garnish with sour cream, shredded cheese, tomato, onion and chopped for a cilantro. Pair with tortilla chips. Enjoy!
