You can decide on how thick you want the crust, but I recommend not making it too thin. 1/3 inch high works well.

Directions

  • 1 Add 2 cups of water to a large pot and let boil. Add the raw cauliflower rice, cook for about 4-5 minutes and strain through a fine mesh colander.
  • 2 Place the cauliflower on a thin and clean kitchen towel and let cool. Wrap the cauliflower in the towel and wring out the extra moisture with your hands. Wring until no more water comes out.
  • 3 Preheat the oven to 450°F. Cover a cookie sheet with parchment paper.
  • 4 Mix the cauliflower, egg, cheese, salt, pepper and Italian herbs. Mix well with your hands until everything is well combined.
  • 5 Stretch the dough over the paper until you have the crust.
  • 6 Bake for 20 minutes or until the crust is firm and browned.
  • 7 Remove from the oven carefully. Add the cheese and bake for 5 more minutes or until the cheese has melted and browned.
  • 8 Let sit for 5 minutes and serve.
