Green Bean Summer Salad

No one likes to spend hours in the kitchen during hot days. During the summer, I love to grill meat, chicken and shrimp in the outdoors grill.

Salads are a delicious and fresh option for the whole family. But… did you know you can also add fruits? Yes! Fruits add that extra flavor kick that will mesmerize your palate. The Granny Smith green apples are available all year round. They?re perfect to combine with fresh lettuce and Roquefort cheese.

Garlic Mashed Yucca

As a root vegetable, there are many variations of enjoying yucca. I grew up on the traditional preparation of the plant, as an accompaniment in typical Cuban fare.

I also grew up on mashed potatoes, an American staple usually paired with a meat entrée and a less starchy vegetable side.

In this recipe, I mix those two worlds to create garlic mashed yucca, a wonderful hybrid of flavors.

Traditional Cuban Yucca

This traditional Cuban yucca recipe is as simplistic as it is comforting. With its garlic infused onion sauce, you won?t feel like you?re eating a root vegetable.

This yucca dish was on every Cuban influenced menu during my childhood and I love sharing it with my family today. It?s simple and quick, yet hearty.

Enjoy!

Puerto Rican Mofongo

When we think about Puerto Rico, we generally remember the beautiful beaches, the amazing sunsets, the piña colada and Caribbean cuisine. In this last category, mofongo is often considered the most popular Puerto Rican dish.

Mofongo is one of the Puerto Rican delights made with fried mashed green (not ripe) plantains, mashed garlic and small pieces of crunchy chicharrón. It is mashed to get a consistency that is neither too soft nor too hard so that it can form a half-sphere or molded into the shape of a bowl to stuff it with pork meat, seafood or chicken chicharrón. My favorite mofongo is served with carne frita or shrimp mojo.

Couscous Fruit Salad

Couscous is such a wonderful grain to work with because it is so versatile. Whether you add savory shrimp and rosemary, or fruit and tart juice, the result will be a delicious and healthy dish your family will enjoy at any time of the day.

Serve this fun salad as a side with lean protein such as chicken or turkey, and you´ve got yourself a light meal full of flavor. Because it´s such a beautiful salad, colorful and fun to eat, kids love to spoon this salad into their mouths and ask for seconds. I guarantee it.

Watermelon and Panela Salad

Bright, light and bursting with flavor, this salad is great for a weekend lunch or dinner party. Save time by prepping the melon and cheese the evening before, place in separate containers and refrigerate until ready to serve; then create your layers. A light dressing made with fresh lime juice, olive oil and cilantro gives this salad a touch of acid without overpowering the freshness of the watermelon or cheese. A sprinkle of olives to complete the dish, serve on a platter or individually for a lovely presentation.
When choosing a watermelon look for a firm, heavy seedless melon. If seedless is not available dice watermelon instead and trim cheese to match. Panela, a Mexican semi-hard cheese is sold by the pound and is located in the specialty cheese section of your grocery store.
