This refreshing salad is perfect as an appetizer or starter at the dinner table. I’ve had it in mind since I first tried it at one of the cocktail parties of a foodie conference in Miami. I’ve been madly in love with it ever since. Considering the size of my mint plant, I was encouraged to prepare this salad to use some of the fresh leaves. The only thing left to purchase was the cheese and that settled it; one night during the weekend I went to work cutting up watermelon. Black or Kalamata olives, cherry tomatoes, or finely chopped green or purple onions make great additions.

Directions

  • 1 Cut the watermelon into small cubes, removing the rind and seeds, and let sit in a strainer to drain some of the juice from the fruit.
  • 2 Finely cube the cheese and mix with the mint that has been cut into small pieces.
  • 3 To prepare a dressing, mix lemon, honey and a pinch of sea salt. Pour over the top and gently toss the salad. Refrigerate.
  • 4 Serve in small bowls and enjoy!
