Directions

  • 1 Heat a non-stick saucepan over medium heat. Put the butter and oil until the butter melts. Add onion and fry until transparent, for 3 minutes. Add tomatoes and green onion, and fry for 2-3 more minutes.
  • 2 Beat the eggs and milk in a large bowl. Season with salt and pepper to taste and mix to combine.
  • 3 Pour eggs on the saucepan. Slowly stir with a silicone spatula. When the eggs start to cook, reduce heat to low. Fold cooked parts of the eggs over uncooked parts. Do not stir constantly. Cook for 3-4 minutes or until the eggs are ready but still a bit wet.
  • 4 Serve with beans, cheese and arepas.
