teaspoons heavy cream

red bell pepper, diced

You can also add peas or other vegetables into this salad, and substitute turkey, grilled chicken or tuna for the cooked ham.

Ensalada de coditos (macaroni salad) is an old favorite among Puerto Ricans and it’s a dish enjoyed by many children, too. Just like the potato salad, it’s easy to prepare as well. Directions

  • 1 Cook the pasta according to the package instructions, adding a little salt. When ready, drain well and set aside.
  • 2 Combine the pasta with the rest of the ingredients, diluting the mayonnaise with 2 tablespoons of cream before adding.
  • 3 Stir once more and garnish with a few pieces of red bell pepper and hardboiled egg.
