Have you ever tried coconut kisses? They're little candies that are crunchy on the outside and soft inside, delicious! This coconut recipe is one of my favorites and I prepare them whenever I can to satisfy my craving for a little something tropical. I also tend to prepare them for my friends and neighbors on special occasions or Christmas parties.

You can also use white chocolate.

Directions

  • 1 Preheat the oven to 325°F and cover two baking trays with parchment paper.
  • 2 Beat the egg whites and mix vigorously with sugar, vanilla and salt until if foams and the sugar is dissolved, add the flour and mix until well incorporated.
  • 3 Add the coconut and mix in with a spatula until the ingredients have combined with the coconut.
  • 4 To make the kisses, you can use an ice cream scoop and make small bundles on the tray separated by 1 inch. You can also use a pastry sleeve with a wide opening.
  • 5 Bake for 20-25 minutes and rotate the tray in the oven so they bake evenly.
  • 6 Remove from the oven and let cool completely.
  • 7 Finally, melt the chocolate in the microwave. Pour it into a plastic bottle with a very small opening and pour over each sweet.
