Directions

  • 1 Heat vegetable oil in shallow pan over high heat. Preheat oven to 450°F.
  • 2 Peel plantains and cut into 1-inch thick slices. Fry plantains on one side for 3 minutes until golden brown. Remove from heat and place on a paper towel to absorb excess oil. Allow to cool for 1 minute. Smash each piece so that they are 1/2-inch thick. They should be soft inside. Return to pan, placing uncooked side down in to the oil. Cook for 3 minutes until golden brown. Remove from heat and place on a paper towel to absorb excess oil.
  • 3 In a clean saucepan, warm butter over medium heat until melted. Combine sugar, cinnamon, nutmeg, vanilla and stir into saucepan with the butter. Stir until well mixed and the sugar has melted into a syrup. Place fried plantains into the mixture and toss until they are well coated.
  • 4 Pour candied tostones into an ungreased 8x8 glass pan. Top with marshmallows, and bake for 10 minutes, or until marshmallows are lightly toasted. Allow to cool for one minute before serving.
