End of the year parties are so much fun! They’re filled with family, friends and food. These parties are always tons of fun in my family, we like to prepare a lot of snacks and drinks and then enjoy a light dinner. The most fun happens when we bring out the appetizers and toast to being together. Today I want to share a recipe that uses just 6 ingredients and can be prepared in just over an hour; it’s perfect for your New Year party. It goes great with cocktails like margaritas or mojitos. Ingredients

poblano peppers

can of corn
1
tablespoon olive oil
2
packages of Pillsbury™ Grands!™ Homestyle Butter Tastin'™ refrigerated biscuits
10
oz mozzarella cheese cut into rectangles of an inch by half inch

sprigs cilantro, finely chopped

    Preheat the oven to 350°F.
  • 2
    Remove the stem and devein the peppers. Dice them about 1/2-inch thick.

    Open the can of corn and remove the liquid.
  • 4
    Heat the olive oil in a pan and fry the peppers for one minute, add the corn, stir well and let cook for 2 more minutes at medium heat. Check constantly to prevent them from sticking to the pan.

    Turn of the heat and let sit.
  • 6
    In the meantime, open the package of Pillsbury™ Grands!™ and cut each biscuit in half.

    Take one half in your hands and fill with a bit of cilantro, a piece of pepper, a few kernels of corn and a piece of cheese. Carefully seal the dough in the form of a ball, make sure not to break it. Place in a baking dish. Repeat until you’ve finished the dough. Do the same with the second package of biscuits.

    Bake for 12-14 minutes or until they’ve browned. Remove from the oven and let sit for about 3 minutes before serving.

    They’re delicious with salsa verde.

Expert Tips

  • If you want to make this recipe without oil, you can roast and peal the peppers, chop them and add them to the corn.
  • You’ll probably have leftover pepper with corn, you can use it in rice or add cream and make tacos.
