Directions

  • 1 Place the yucca, onion, yucca flour, salt, and cilantro leaves in a food processor and pulse several times until everything is well-mixed. The end product will be a sticky paste.
  • 2 Heat the oil in a nonstick pan over medium heat.
  • 3 Flour your hands and form the yucca pancakes. Make them any size you wish.
  • 4 Fry the pancakes, in batches, until they are golden on both sides, about 2 minutes per side.
  • 5 To make the cilantro sauce: place the mayonnaise, cilantro, and lime juice in a small food processor. Process until everything has been well mixed.
  • 6 Serve the pancakes with the cilantro sauce.
